Do these work with a watch?

One adjustable Velcro straps on the wrist for customer fit, but you can wear the watch beside it.

Large size straps do not fit around my wrist. Where can i get exact style that has longer straps

We're so sorry for what happened to you, Large size is the maximum size of this wrist protective gear, maybe you can try our other wrist protective products which has size X-Large.

Are these stiff enough to use to keep my hands from curling while I sleep?

There is some flexibility mostly to let hand bend back a little. Nice hard shell. not able to flex wrist forward. Velcro straps easy to adjust.
