The blades are only about 3.5 inches Don **Q: Would this be good for cutting herbs/sprouts to eat?** A: Should be - has a very good cutting edge. **Q: Are they re-adjustable at the joint? Is there a screw you can re-tighten?** A: Yes, there is a screw on the scissors, and I imagine that it's purpose is to readjust the scissors, either to tighten or loosen the cut. I have purchased several pairs of Westcott Scissors over the years, for home as well as business use, and have never had a problem. Bottom line: I love Westcott Scissors and in my opinion you can't go wrong w/giving them a chance! **Q: Are these good for cutting poultry?** A: Cutting poultry is not the intended use of these scissors. We recommend purchasing kitchen shears from Clauss that work perfect for cutting poultry.https://www.amazon.com/18728-Titanium-Detachable-Chef-Shear/dp/B00OCZH2EG/ref=sr_1_2?ie=UTF8&qid=1483102028&sr=8-2&keywords=clauss+kitchen+shears ## Customer Reviews ### ⭐⭐⭐⭐⭐ Great scissors, blades never dull. *by A***Y on 27 January 2017* Have bought several sets of these scissors - best I've found so far.
