How long does it take to ferment?

3-5 days at typical Indian room temperature (25-32°C). Cooler weather may extend it to 6-7 days. The bubbles in the airlock tell you when it's active.

Is this really probiotic?

Yes. Wild lacto-fermentation produces 8+ strains of beneficial Lactobacillus bacteria, with measurable CFU counts by day 5.

How long does it last?

Once ready, swap to the storage lid and refrigerate. Refrigerated kanji stays good for up to 2 weeks.

The jar lasts years sturdy, food-safe glass, dishwasher-safe. The airlock is reusable indefinitely. Just buy refills.

Is it safe for diabetics?

Yes. There's no added sugar. The natural sugars in the vegetables get consumed by the fermentation process.
