Is the medium kit too small for a 5 gallon aquarium?

I would say yes it's too small for that.

I have three small 5.5” tear drop terrariums. Will the medium kit be enough for all three?

Yes it should fit 3 to 4 depending on how much you use.

will this work for things like tomatoes?

No. You’ll need to find things like miniature plants that won’t grow much. It’s enclosed and only like a foot tall.
