Review: Not exactly what you think, but better... - Unfortunately, as you probably know, Kraft quit marketing their cheese powder, so I've been on a search for a replacement and this seemed like a likely candidate. The Hoosier Hill powder, while ostensibly is made by Kraft, is *not* the same thing that comes in a box of Kraft Macaroni and Cheese today. The powder that now comes in the blue box is a lighter color, and has less flavor than this product. I compared them raw side-by-side, and the Hoosier Hill powder is a darker orange color, and has more cheese flavor. Kraft has monkeyed with the cheese powder more than once through the years, so I know it's not the same as it used to be. So, I made the blue box last night, and I added two tablespoons of this powder in addition to the stuff in the packet. The results were absolutely stunning, and I don't use that word lightly. All of a sudden the anemic modern Kraft Mac 'n cheese of today was gone, and it was like I had fallen through a wormhole in space and time all the way back to 1975, when I was 10 and I adored the blue box above all others. My mac was now a deeper shade of orange, and had a much stronger and deeper cheese flavor. It was glorious. I had to restrain myself from eating the entire box standing right there at the stove. It was that good. And the leftovers this morning (served with a poached egg on top) were marvelous (try it!) My next box, I'm just throwing out the packet completely and just using this, which means in the future, I don't have to buy the box anymore, at all. I just need some good thin macaroni and this stuff and I'm good to go. Oh, and it was pretty good on popcorn, too.

**Q: What is the difference between this "premium" labeled cheese powder versus the one labeled "gourmet" ?**
A: I'm not finding a "gourmet" cheese from this brand. This product, the Cheddar Cheez powder has added hydrogenated soybean oil and artificial coloring. The regular Cheddar Cheese powder uses sunflower oil and artificial coloring. The Premium Cheddar Cheese powder does not have added oils and uses paprika and Annette for coloring. The Extra Buttery powder starts with buttermilk powder, includes nonfat milk powder with paprika and annatto for coloring.

**Q: I need a recipe for Cheddar Cheez soup using this product. Does anyone have a recipe.**
A: I love this one.  2 Cups powdered coffee creamer (like coffee-mate), 1/2 Cup cheddar cheese powder, 1 Tbsp parsley flakes, 1 Tbsp chicken bouillon powder, 2 tsp dried onion flakes, 2 Cups instant potato flakes, black pepper to your taste.  What I like is, using this base, you can makes as much as you want.  The ratio is one cup liquid to 1/2 Cup cheese soup mix.  I make it a cup at a time, but you can make more.  I have made this cup-of-soup in the microwave, but I prefer stovetop.  Here's what I do:  mix 1C water (or 3/4 C water and 1/4 C beer) 1/2 C soup mix.  Whisk together, and heat over med-high until thick and bubbly.  If it's too thin, cook it longer, if it's too thick, thin it down with some liquid.  I add red pepper flakes or a bit of cayenne, (or both!). If you want a whole pot, use the 1C to 1/2 C ratio, but maybe pull back a little bit on the liquid.  You can add more later if you need to.

**Q: Is this gluten free**
A: I'm allergic to gluten. This is why I bought it--can't eat normal pasta anymore. With that said, I am NOT Celiac. This is pretty much just a dehydrated cheese-dairy product, but it has been manufactured alongside places contaminated with gluten and nuts. I do not believe I have had a bad reaction to it. However, again, I am allergic to gluten, but NOT Celiac. If you are Celiac or are super sensitive to things that are manufactured in contaminated places, then do not buy it. However, if you are merely allergic and can have things that are slightly contaminated, go for it. There are different levels of being allergic/sensitivity, and I'm not sure how sensitive you are.

**Q: Doors this contain bht or bha?  what preservative does it use?**
A: From the package in front of me: A Dehydrated Blend of Cheese (granular and blue (pasteurized milk, cheese culture, salt, enzymes)), Whey, Partially Hydrogenated Soybean Oil, Whey Protein Concentrate, Lactose, Maltodextrin, Salt, Sodium Phosphate, Citric Acid, Lactic Acid, Yellow 5, Yellow 6. **Contains: Milk Ingredients   *Packaged in a facility shared by treenuts, peanuts, dairy, soy, and wheat products.

### ⭐⭐⭐⭐ Makes me Happy

My first exploration into powdered cheeses was to see if any brand would be EXACTLY like Kraft mac & cheese. None are really. But Hoosier Farm makes some good powdered cheeses. I don't make mac & cheese with them after finding it not ideal for that purpose, but if I make a thick stew or chili that didn't turn out as nice a flavor as I'd expected, adding Cheddar Cheez Powder makes the whole thing taste better (whereas to grate some fresh cheese into the stew can be gummy on pot, plate, and spoon). It's turning out to be a useful ingredient for many things.
