Frankly it was delicious and jelly-like before it was even 'finished' setting (in a much lighter, less solid kind of way) but by later that day was very solid and convincingly jelly-like, and stayed that way for more than a day afterwards (I had eaten it all by then!). This was with the Raspberry and Forest Fruits varieties though, so maybe it's only a problem with the other flavours. The flavours themselves were a slightly mixed bag. My wife finds Stevia (which this uses) to have a very strong aftertaste, so she was not a fan, as expected. I don't mind Stevia, and generally found them to be delicious, but did find them to be very, very sweet in places, in a somewhat artificial way. More critically, the Forest Fruits flavour had an initial very bitter taste, of a slightly medicinal character, which rather undermined the point of nice-tasting jelly! It is very easy to prepare. just mix with hot water and allow to set. it sets very quickly in just over an hour. but i preferred to let it chill in a refrigerator. It does not leave an after taste in the mouth. i would recommend this as a gelatin free and especially for diabetics.
