Does this have a metal mesh filter at the spout for those who have hard water?

It does not. Suggestion, for coffee and tea used filtered or bottled water. You will be amazed at the improved taste.

Does it come with a quick boil function?

The default mode is quick boil, and it could not be changed, if you want to boil faster, add less water. Wish this answer could help

I just used it for the first time and then turned it off. is the "on" white led supposed to stay on when i turn it off?

Yes it stays on. When the screen goes dark, the power is off.

What is the diameter of the opening where water goes in?

About 4 inches I would say. It’s easy to fill.
