Only if your Internet service provider is also using ubiquity equipment. Call Their customer service center to make sure before you purchase.

Is it possible to use two of these connected over fiber to extend my home network to and out building, or is the OLT required at one end?

If my understanding is correct you would need this (Ubiquiti U Fiber OLT 4-Port GPON Optical Line Terminal with 3 GPON/1 SFP+ Ports) at the head-end to make that work. I do not understand the Ubiquity's ONTs to be capable of an adhoc PON.
