Question 1

Can you can green beans ?

Accepted Answer

Green beans can be safely water-bathed but it takes 3 hours. The steam canner is only good for things requiring less than 45 minutes

Question 2

I have a glass top stove. I want to start canning our garden this year. What should I use for low acid foods? Can I use a water bath on a glass stove

Accepted Answer

Low acid foods CANNOT be safely canned using steam canning or hot water bath canning. Only high acid foods (fruits, pickles, etc.) can be safely canned with this canner. This canner is made of aluminum and does not have a flat bottom. That will cause issues with some cooking surfaces. If your surface requires a flat bottom, this is not the right tool for you. Perhaps instead you should consider VKP1130.Feel free to contact me with any other questions pertaining to this product.-Kimberly GaverVICTORIOProduct Managerhelp@victorio.info

Question 3

Is it tall enough to fit 1/2 gallon sized jars?

Accepted Answer

No. You should only be canning grape juice or apple juice in ½ gallon jars. Here's the info on the National Home Food Preservation website run by the FDA:

What can I process in half-gallon canning jars?
At least one canning jar manufacturer is selling half-gallon canning jars. That manufacturer has a printed note on the top that says half-gallon jars are only used for some highly acidic foods in a boiling water canner, with instructions to call a toll-free number for the instructions. When we last called, the only choices are grape juice and apple juice, as we also recommend.

The only processes that USDA, the National Center for Home Food Preservation and the University of Georgia have to recommend for half-gallon jars are for very acidic fruit juices (and juice only): Apple Juice (http://www.homefoodpreservation.com/how/can_02/apple_juice.html) and Grape Juice (http://www.homefoodpreservation.com/how/can_02/grape_juice.html). This process time is not to be used for tomato juice, for example.

There are no other research-tested processes for half-gallon jars. Boiling water processes for other foods for jars larger than those published with recipes (usually pints and/or quarts) cannot be extended by any formula to a larger jar.

We are aware that there are historical recommendations for canning foods in half-gallon jars. However, these are not currently accepted or endorsed by the USDA, Cooperative Extension System or U.S. manufacturers of home canning jars.

Question 4

Can the steam canner also be used to sterilize the mason jars after i wash them in sudsy hot water and they are clean & if yes please explain thx

Accepted Answer

It is no longer considered necessary to sterilize canning jars as long as you are water bath canning for at least 10 minutes. It is no longer necessary to sterilize or boil your canning lids. Please check out the latest canning methods via the manufacturer's website. That being said, I love this canner, faster than the old style canner and much lighter weight. Excellent value.
