How much sand will it hold? I literally found three different amounts in the description

We put in 1000 lbs and it’s a good amount. It could hold more.

On a scale of 1-10, how difficult is the assembly? For senior citizens with limited building skills.

You don't specify, but assuming 1 is easy and 10 difficult, i would say maybe a 2 or 3. Not difficult at all.

Does it hold 500 or 1000 lbs of sand? It has conflicting capacities in ‘Details’?

Hi, 500 lbs. should fill it around halfway full, and 1000 lbs about 3/4 of the way full. It just depends on how much sand you want. Thank you, Creative Cedar Designs

are the panels big enough for kids to sit on

Yes. My 3 and 5 year old sit on it easily.
