can you sync them with asrocks polychrome rgb sync?

No, you can not. Our FX-120 does not support software control. It has only one light effect.

I was wondering if I am able to use 2 of them opposed to 3? Are they connected together?

The 3 fans of FX-120 are independent. You can connect the fan at will.

Is there a way to power these via USB?

That is a good question. I could be possible but you need some skills to do that. It doesn't come with that type of connection.
