**Q: Can the probe's plastic insulation be stripped back an additional 2". Would like to place end of probe between to aluminum plates**
A: Yes they can.

**Q: How long are the probes?**
A: The probe leads are just over 40” k type thermistors. For the money this is a good tool to have. 
For any  Critical temperature measurements I use the copper brand

**Q: Does this thermometer have a user calibration option? Does it have cold junction compensation?**
A: Not that I know of. A digital thermometer, that, depending on the probe, can measure extreme heat and cold.

**Q: Would this make a good field thermometer - subject to wet conditions?**
A: Not sure about the unit itself the probes can be put in water.

I find the accuracy pretty close to a fluke brand thermocouple. I use this for AC vent readings which is pretty helpful. Just be careful not to drop it. it feels like a brittle plastic toy however, it does job and thats what matters.
