Could you use this product as hinges for a cabinet where the door lifts up?

That is exactly what I used it for, a desk top that folds up. The only caution is to make sure you attach a chain or cable stop to the surfaces top keep the top from opening past 90 degrees

Does this product essentially “slow close” when closing the lid to not allow fingers to get smasshed?

It not so much that it slows it, but it is designed to require you to push to close. That is, when you open the lid it will hold it in place at any level. Pay careful attention to the stats on the needed size. For small toy boxes, it works well, but if you have a larger item it will not function.

I just got these and they're stuck in the 90 degree position they came packaged in. Is there a trick to unlocking them / getting them to move?

They are just very stiff, as they need to be to function. Try screwing a piece of scrap wood to each side, maybe 12" long, and you will be able to move them. I have used thes several times, and they work perfectly. You are underestimation the force needed to flex a hinge that can hold a 20-30 lb. lid.

Does this come with the mounting jig that is pictured?

The packages that I purchased did not come with a mounting jig. I would recommend getting a jig and a self centering drill bit to pre-drill the holes for the mounting screws, it makes installation a breeze.
