**Q: What is the shelf life for these?**
A: Honestly, I dont know about shelf life. I do know that the food i ordered two years ago I just used and it was fine. The dehydrated foods just last.

**Q: Do these actually reconstitute well? Some things just don't so am wondering from those who actually use. Thanks.**
A: The hotter the water you soak them in the better. I usually put them into my pot of boiling water and let them steep in it for at least an hour on the edge of the fire before even trying to do things with them. It does help to season the water with salt, pepper, garlic while steeping. The final texture isn't quite like fresh but they do soften up very well. If you're preparing them at home for use in soups or stews about 2-4 minutes in the microwave covered in water works quite well also. I have used the peppers and onions in this manner in potato salad and they remain crisp in the salad and don't fall apart or get mushy. The celery would probably work just as well too.

**Q: Im trying to figure out about how far all of this will go. It says 50 cups, but I can't seem to figure out a meals per day/how many days, comparison??**
A: Most of the veggies call for one cup of water for 1/4 cup of veggies. So what I do is supplement my dehydrated meal with 1/4 cup dried veggies of my choice and add an additional cup of water above what the meal calls for. Using this method, 50 cups would last me a very, very long time. I don't know if you're using it this way or not. Most backpackers use them like this.

Because of the premium, clean, high-grade quality of our products, we have chosen to package them for daily use--rather than keeping them concealed in a can for years (this is usually a lower cost, lower grade product, designed for survival only--not taste).  The suggested shelf-life of our premium products (opened or sealed) is 12-24 months.  The reason the range is so broad is because of climate variations. Most customers can expect an even longer shelf-life for our products. This is assuming an average climate and original packaging. If you live in an excessively humid environment, or do not have a climate controlled house, storing the items in the refrigerator will reduce moisture and extend the life of the product.  Our premium products are packaged for daily use, and are not "survival grade" quality.  However, because of the quality of our food, many users feel safer using them for their long-term storage needs as well.  If repackaged in storage pails with oxygen absorbers, or resealed using a seal-a-meal type unit, you can extend the life of the product as much as those packaged in cans.  Please be aware that high humidity and unstable room temperatures can decrease the shelf-life of dehydrated products and other food items, regardless of how they are sealed or the manufacturers claims.

Overall, I rate this backpacking kit with 4 stars because there are a few veggies that take a very long time to hydrate. The peas would be a good example. The green beans don't seem to get too soft either. But overall everything taste fine in soup or whatever you're making. I definitely agree with the other reviewer who said the cabbage taste great alone. Actually, the cabbage is so good I plan to purchase a gallon size container of it from harmony house's website. I purchased the sample kit so I would know what I could order in larger quantities later on. As of right now, I love the cabbage, mixed peppers, carrots, celery, onions, northern beans, and tomatoes the best, and will order all of these in larger containers next time. The most simpliest way to use these samples is by adding any of them to chicken or beef broth or even use bouillon cubes, and that's all you really need. Taste just fine. And I make my own salad dressing so I take the onions and mixed peppers and hydrate them in oil, vinegar, water and seasoning, and it makes some really tasty salad dressing. UPDATE: During the holidays, I travelled via plane to several cities and I included some of these veggie packets in my carry-on. I ended up staying in a hotel that had a small kitchenette and making soup was a breeze using these dehydrated veggies. I'm on my way on another trip and I already have a few of these stashed in my carry-on. If you're a backpacker or not, these veggies/beans go great with rice. If you carry along some rice in your backpack and a few of these pouches, you can add the rice and red beans in a pot with water and seasonings and simmer and have a great lunch.
