Do not use and oil like sunflower or grade seed. After the loaf is baked it will continue to leech out the oil. I also have found it beneficial to use coffee filters in the bottom and on the top of the loaf to soak up condensation in the container. Finally I can eat again! ### ⭐⭐⭐⭐⭐ You won't miss gluten :-) *by D***D on November 26, 2015* This delicious mix makes beautiful brown flavorful waffles that are light and airy with the right amount of density. When my older son was a teenager he had a severe case of acne that lasted a couple of years. I found suggestions that he should try a gluten free diet so we did. All I can say is initially we were not impressed with any of the gluten free bread products we bought or made. Then I found Pamela's Gluten Free baking mix and tried making the waffles. They were amazing! After making waffles on a weekly basis for a few months I tried the banana nut bread recipe. Yum! Now, years later, we are still using this wonderful product and we don't even need to eat a gluten free diet. * By the way, my son's acne went away after just a few weeks on a gluten free diet. He stayed on the diet for 2 years after that. He's fine now. Over the years I've tweaked the waffle recipe that's on the bag a little. It's not necessary but I like to change things out sometimes. Anyhow, when I beat the egg whites, I add about 1/4tsp of vanilla and about 1/4 cup sugar. Also, I think Pamela's reduced the butter in their waffle recipe by half after we had been making it for over a year. I still use the 2 Tbsp butter or unrefined coconut oil initially called for in each batch. When I use unsalted butter or coconut oil I add a little salt to the mix. We have a restaurant quality Belgian waffle iron which might make a difference but they are heavenly served with strawberries, maple syrup and fresh whipped cream. We make extras and freeze them for snacks throughout the week. I recently ran out of Pamela's mix and made some waffles using wheat mix and everyone agreed that they weren't as good.
