The documentation on your website on how to power this thing is terrible. Which harness do I buy to convert the power plug to the board?

You need a powersource that is capable of 5V 4A. You just need to connect positive and negative pins to the coresponding pins on the board. pin 3 is 5v+ and pin 2 is GND (there are more, but this should get you running)

What case and power supply is available?

One of the main reasons that the board is so inexpensive is the lack of a case. There are a variety of free 3D models that you can download for free from Thingiverse. There are many who sell the cases that are 3D printed both here on Amazon as well on eebaee.
